Air Fried Potatoes!

I just got my first air fryer and I keep asking myself why I waited so long!!

I posted these potatoes in stories the other day and received an overwhelming amount of requests for the recipe!

Let's be honest, nobody likes to read 10 paragraphs before the actual recipe so here it goes. Also, full disclosure - I don't measure my ingredients. I eyeball everything. I like my food thoroughly seasoned (you should see my seasoning collection)! The measures below are estimates!

1 Bag of potatoes ( I used small small creamer gold potatoes but you can use a medley, or fingerlings or reds!

1/2 tablespoon of sea salt

1 tablespoon of oregano

1 tablespoon of garlic powder

1 tablespoon paprika

1/2 tablespoon black pepper

2.5 tablespoons of freshly grated parmesan cheese

3 tablespoons of EVOO (maybe a little more - they should be nicely coated but not drenched)

2 tablespoons of fresh chopped parsley for garnish

(You can honestly use any seasoning mix you want. Next time I am going to make some Old Bay potatoes - it's a Maryland thing)!!

The first thing I did was wash my potatoes in a colander with a vegetable brush. Then I sliced them in half and placed them in a glass bowl.

I then added all of the seasoning and EVOO, mixed well with a spatula then put them in the air fryer! I cooked them at 400º for 10 minutes (my air fryer prompted me to open and shake about 8 minutes in). Once the 10 minutes were over I shook them around and then cooked for another 3 minutes. I definitely kept my eye on them since this was my first time making them in the air fryer!

They came out perfectly crisp on the outside and super soft on the inside.

I sprinkled more parmesan on top of the potatoes once they were done as well as more sea salt and garnished with the freshly chopped Italian parsley.

This was so much simpler! Making this in the oven normally requires a 45+ minutes of cook time and sometimes boiling the potatoes first!

I am so excited to cook more with my air fryer and even more excited to share the recipes with you!

Xo,

Mimi
